Who: Beth Corson, 48, a medical reception manager from Berlin Township, New Jersey

Height: 5’1″

Starting weight: 196

Current weight: 160.7

How long it took: One year.

Why I wanted to make a change: “In May 2017, I got home from a trip in London and I was very uncomfortable walking and getting around. I forced myself, but the pain was terrible.”

How I changed my diet: “I hated vegetables and salads, and I thought everything belonged on a roll. I learned that with some simple recipes and some willpower, vegetables can actually be tasty and I don’t get bored of them. I now eat more lean protein, like chicken and fish, and less red meat and unhealthy starches.”

How I changed my exercise routine: “I never exercised at all, and now I enjoy going to the gym. I am at the gym four to five times a week with at least 50 minutes of cardio and one strength or burn class each day.  I also hired a personal trainer to help me work towards my toning and strength.”

What else has changed: “I start my day much earlier because of the amount of energy I have. I completed the three-mile sprint Bonefrog Challenge in May, and it felt amazing. I did obstacles I never knew I could do.”

What I’m most proud of“My drive to continue to be healthy and not looking back.”

The hardest part: “[My husband’s] diet and sweet choices that he eats in front of me are torture, but I’m committed.”

What’s next: “I am currently enrolled in a eight-week weight-loss challenge [at work], and my goal is to loose 16 more pounds to meet my goal weight of 140.”
