But this week, we give you something a little different from the tuna casseroles of your youth: Five creative casserole dishes you’ll actually look forward to eating (really!), from a skinny Mexican casserole to a caprese quinoa bake that you’ll want to eat every day for the rest of your life. And the bonus is, if you have family coming to town this week, these dishes make serving a table of people easy — just throw everything into the casserole dish, whip it up, and let folks serve themselves.
