Summer Food: The Tastes of Summer: Cold Soup



At cooler­temperatures, soup is a canvas for the flavors of summer’s freshest fruits and vegetables.

* Carmine’s Creole Cafe (232 Woodbine Avenue, Narberth; 610-660-0106) adds depth to a cool watermelon soup with fresh ginger and crispy blackened shrimp.

* Veggie heaven Horizons (611 South 7th Street; 215-923-6117) double-doses green, blending avocado and cucumber purees to create a smooth offering topped with smoked pumpkin seeds and toasted cumin oil (above).

* Chef Guillermo Veloso at Cuba Libre (10 South 2nd Street; 215 – 627 – 0666) bends rules with his soup cocktails, shaken and served in cocktail mixers. The vibrant orange calabaza, a West Indian pumpkin, is blended with ginger ice cubes and crème fraîche.

* The Orchard (5030 Orchard Avenue, Kennett Square; 610-388-1100) makes a chicken – stock – based version of traditional tomato gazpacho, drizzled with olive oil.
