I don’t know about you, but some days (okay, fine, MOST days), the thought of going home and putting effort into keeping myself alive with a healthy dinner after a draining day at work feels like being asked to run home after completing a marathon. Like, can’t someone just give me a banana and we call it a day already?!

On these days when I don’t feel like putting in work in the kitchen after getting home from work (so most days), I make scrambled eggs and shed a tear over my plate. But the truth is, your lazy dinners don’t need to be as a sad-face-emoji-inducing as mine, and these one-pot and one-pan dinners — where, generally speaking, you throw a bunch of ingredients into one pot or one pan and let heat work its magic — are proof.
