Vegetarian Pho Coming to Fishtown

If you’ve ever had a hankering for vegetarian pho in Philadelphia, then you know finding any is a frustrating, depressing, hanger-inducing challenge. The Vietnamese noodle soup is typically made with beef stock and usually has meat in it, so nine times out of 10, it’s a no-no for us meatless folks. But not for long: The vegetarian-friendly pho spot Stock is set to open its doors at 308 East Girard Avenue in Fishtown come April. Go ahead and shed a few tears of happy joy, vegetarian friends—I totally did.

According to the Northeast Times, the 20-seat BYOB pho joint will serve up mushroom-based pho broth, along with tons of other vegetarian-friendly menu options. Owners Tyler Akin and Nicole Reigle expect a mid-to-late April opening, pending inspections. Until then, you can get your daily pho fix via their Instagram, @Stockphilly.
