Marc Vetri Is Taking Fiorella to Vegas
As coronavirus cases in Nevada spike, Marc Vetri is opening a long-term pop-up inside Red Rock Casino Resort and Spa.

After making some controversial comments calling for Philadelphia to allow indoor dining, Marc Vetri announced today that he’s taking the Fiorella name to Las Vegas for a long-term pop-up with the potential to turn into a permanent project. Starting July 10th, Osteria Fiorella will open inside the Red Rock Casino Resort and Spa, serving a much larger menu than the one available at the Philadelphia version of Fiorella.

This is the second expansion Vetri has announced in the midst of the coronavirus crisis — in May, he announced the opening of Mr. Maurice’s Italian, a red sauce joint inside the Ace Hotel Kyoto. It’s also his second project in Vegas. Last year, Vetri opened a second Vetri Cucina in the Palms Casino, which is currently closed. The team from that restaurant will run the kitchen at Osteria Fiorella during the pop-up. For now, the restaurant will be open Wednesday through Sunday, with reservations available via OpenTable.
In addition the handmade pastas that have made Philly’s Fiorella popular, Osteria Fiorella will serve pizza made in a wood-burning oven, antipasti, salads, and meat and fish entrees out of space formerly occupied by Terra Rossa, another Italian restaurant. Scroll down for the full menu. Red Rock Casino is owned by Station Casinos, the same company that owns Palms, where Vetri Cucina is located. Red Rock Casino is part of Station Casinos’ first wave of reopenings, while the Palms remains closed as the company assesses safety.
