Eat This Now: Hearthside’s Limited-Edition Fried Chicken

The Collingswood BYO will serve just 10 orders this Friday and Saturday nights.

This one is for all the fried chicken fans out there (and if that somehow doesn’t apply to you, I encourage you to reevaluate your life choices).

Hearthside in Collingswood has been dabbling in fried chicken for a while now. And it’s no wonder: co-chef Aaron Gottesman worked as chef de cuisine at Kevin Sbraga’s erstwhile The Fat Ham, so he obviously knows his way around a bird.

This weekend, Gottesman is serving a special of his own recipe, one that’s different from Sbraga’s but sounds no less mouthwatering: the chicken gets a 48-hour brine in buttermilk and spices, and then it’s double-fried.

Gottesman’s special gets you a crispy-fried half bird, plus some friends to go with it: bowls of vinegar slaw and smoked mac ‘n’ cheese, plus fluffy Parker House rolls and some honey-chili glaze for dipping. The dish easily serves two, and it’s just $32.

Here’s the catch: this deal is available on Friday, March 9th and Saturday, March 10th only, and just 10 orders will be available each night. So make your reservations now — we suggest getting there early — and prepare to feast.
