Mary Tierra, ancho-marinated veal tongue, tuna confit, tomato-parsley pico de gallo and fried capers
Baja, achiote-marinated mahi mahi with grilled pineapple, avocado and watercress
Arrachera, marinated hanger steak a la plancha with caramelized onions, tomatoes and salsa ranchera
