What to Eat This Week: January 20th-24th


Unless you’re carbo-loading for a marathon, pasta is probably not on your list of healthy, go-to meals. Well, this week, that will all change, my friend. With these creative, healthy and—most importantly—insanely delicious twists on traditional pasta dishes, you can indulge in pasta every single night of the week without feeling a hint of guilt. No really, I swear!

Your cooking objective this week is to make these “pasta” dinners loaded with nutrient-packed favorites, like butternut squash, eggplant, and cauliflower.
