Heather Thomason of Primal Supply Meats is everywhere these days: her CSA-style butcher’s club is thriving, she’s running the Winter Fare farmers’ market pop-up, and the Primal Supply team is opening a brick-and-mortar whole-animal butcher shop on East Passyunk this spring.

And since her butchery company opened in 2016, she’s also been quietly supplying local, pasture-raised meats to some of the city’s top restaurants — including the crown jewel of upscale Italian, Vetri Cucina.

On Tuesday, January 16th at 6:30 p.m., Thomason will take over Vetri’s 18-seat upstairs space in collaboration with the Vetri team to host a meat-centric meal. The menu will focus on the pasture-raised products she sources from independent farmers in Pennsylvania and Maryland, with an emphasis on local ingredients.

The dinner is $185 per person, inclusive of the hospitality fee, and an optional wine pairing is available for an $135 (wine by the glass and other beverages will be available for purchase the night of). Take a look at the menu below and get your tickets here.
