More News From Volver: Bar Volver Reopens With New Menu And Cocktails
Yesterday, we told you all about the new season and promised re-opening of Volver’s main dining room on September 2nd. Today, there’s word from the other half of the operation–Bar Volver. It will be re-opening tomorrow, and comes back to the scene with a new menu, new cocktails and more.

Even at this late hour, pieces of the menu are still coming together. The meat and cheese lists, for example, which, right now, remain in flux. We’ve seen an early version which has lomo Iberico and Spalaccia from La Quercia, three carefully vetted cheeses, each presented with their own accompaniments, and a daily selection of oysters. But the rest of the menu is a little more solid.
Remember back when Bar Volver was all about caviar and tiny, open-face sandwiches? Yeah, not so much anymore. They’ve re-thought the usefulness of this lovely, surprisingly comfortable bar space and added a fuller menu to it. It looks like this right now:

huitlacoche crema, flowering coriander, pickled pearl onion
sesame, scallion, karashi mayo
egg, potato, jamon serrano, saffron aïoli
PAELLA MAKI ROLL
saffron rice, shrimp, chorizo, piquillo peppers, ponzu
tomme de savoie, red pepper confit, basil aïoli
veal short rib barbacoa, refried beans, goat cheese crema, apple, pickled cabbage
red onion marmalade, harissa aÏoli, sheep’s milk feta
The ham tartine is basically the sole survivor from the original menu (and even that is only similar because its a tartine), but there are some really interesting things being offered here–not the least of which being that lamb burger which, with Justin Bogle (whose lamb burger was one of the best things he had going during his time at Avance) on Team Garces now, should be awesome. Personally, I’m excited for that paella maki roll, too.

Anyway, there’s also a new cocktail menu being rolled out at the bar. And we’ve got some intel there, too.

Of course, there’s also beer and wine and all that stuff. The bar will be open starting tomorrow, and I have a feeling we’ll be there to check it out sooner rather than later.
