PHILADELPHIA, PA – Chef Jose Garces’ stunning Amada (217-219 Chestnut Street, 215-625-2450) a Spanish tapas bar and restaurant, offers savvy entertainers a truly one-of-a-kind dinner option: Asado de Cochinillo, a whole roasted suckling pig dinner prepared by Chef Garces and his team will be offered “to go.” Fans of this spectacular delicacy can serve it to their holiday guests along with four savory side dishes and dessert in the comfort of their own home. The cost is $50 per person, with a minimum order of five people.

“The holidays are a perfect opportunity to spend time with family and friends and enjoy great food,” says Chef Garces. “By offering our suckling pigs to go, we’re making it even easier for people to come together for a great meal.”

Chef Garces brines each suckling pig for 24 hours in a salt water and sugar solution, to ensure the meat is tender and flavorful. Then he confits the pig in pork fat for up to three hours. After roasting it at 250 degrees for another hour, to crisp the skin and lock in its natural juices, it is finished with sea salt and arbequina olive oil. Each pig comes with four delectable side dishes: Charred Green Onions, Herb-Roasted Fingerling Potatoes, Chickpeas with Spinach, Rosemary White Beans with Ham and for dessert, Rice Pudding.

Guests who wish to indulge in this incredible dining experience are required to reserve suckling pigs at least 48 hours in advance, to give the kitchen enough time to prepare their special feast. For example, orders for 3 p.m. on Wednesday must be placed by 3 p.m. on Monday. Pigs are specially ordered from Four Story Hill Farms in Honesdale, PA.
