Summer Food: The Tastes of Summer: Corn



Exurban legend: We’ve heard about the farmer so fanatical about freshness that he won’t sell you corn unless your water’s already boiling. Pete’s Produce Farm (1225 East Street Road, West Chester, 610-399-3711; petesproducefarm.com) doesn’t require that kind of proof before you take home a bushel of Mirai, the Japanese-bred crisp-sweet yellow corn that has foodies all a-twitter. Owner Peter Flynn grows some 20 varieties of sweet corn and more than 40 kinds of tomatoes on 200 acres in Chester County. Steam stripped ears over boiling water for three to five minutes, or wrap in foil and grill. Then eat them on the cob with butter, or strip the kernels and add them to tomato salsa.
