A Summer Recipe Inspired By “Eat, Pray, Love”

Remember that simple meal in Italy?

In my eyes, this lunch is perfect. It’s simple, fresh and delicious. It’s quick. It’s balanced and nutritious. Do I even need to say anymore? Well, I will. With summer in full swing and fresh produce available at every turn, meals this time of year don’t have to be fancy. When I was eating this for lunch the other day, it reminded me of the scene in Eat Pray Love when Elizabeth Gilbert is relishing a simple meal of asparagus, hard boiled eggs and olives. Of course, she was in Italy, but we can enjoy la dolce vita, too. Simply close your eyes, eat slowly and savor each bite!

A Simple “Eat, Pray, Love” Lunch
Serves 4
2 slices fresh part-skim mozzarella
1 hard-boiled egg, sliced
1 roma tomato, sliced
½ avocado, sliced
¼ c. basil or arugula
1 tsp. extra-virgin olive oil
Sea Salt, to taste

Prepare all ingredients. Garnish with basil or arugula. Sprinkle with sea salt and drizzle with olive oil.
