Marvelous, Gluten-Free Muffins

Yesterday, our photo editor rolled into work with a box of gluten-free goodies from Wynnewood’s Main Line Baking Co., and said:  “You have to try the carrot muffin. It’s the best gluten-free muffin I’ve ever had.”  She was right. I’ve tried quite a few gluten-free muffins in my day, and this one topped the list: It was moist, delicious and had perfect texture. Within a few hours, the rest of the muffins and breads were gobbled up by our hungry editors. And we Philly Mag staffers aren’t the only ones loving the Main Line bakery’s treats.

“We’re just trying to keep up with the demand at this point,” owner Deborah Lamprey told me when I gave her a ring this morning. Lamprey, a former chiropractor, opened the gluten-, nut-, and dairy-free bakery inside the Wynnewood Train Station last July after learning that both of her children, Fiona, 7, and Declan, 4, had inherited her sensitivity to gluten. “It got to the point where we couldn’t have anything. I was frustrated with the options and I wanted my kids to have really good baked goods. At first, it felt like we were the only ones that needed this, but now there are so many families in the area that are using us.”

The tasty treats took Lamprey about a year to develop. “The vanilla cake was the hardest one,” says Lamprey, noting that the ingredients in each recipe are completely different. “Some use rice flour, while others have rice starches or sorghum—it just depends on what works best for each item. The cupcakes and  birthday cakes are probably our biggest sellers.” Lamprey also makes muffins, breads, and plans to have wedding cakes, as well a few vegan options, soon.
