Taste: Dining Out: Dinner With: Steve Poses

Caterer, restaurateur and author, “At Home: A Caterer’s Guide to Cooking & Entertaining”

How much you miss your legendary Frog restaurant: Been there and done that. New chapters are important.
After a long week of catering, whether you avoid cooking big family dinners: No, there is no substitute for entertaining family and friends at home.
Wawa order: Classic Italian with extra onions and hot peppers.
Most influential cookbook: Two: Mastering the Art of French Cooking, and a series of Time/Life international cookbooks from the late ’60s.
Food you’d refuse to give up per doctor’s orders: Pasta with a nice bolognese sauce.
Projected winner of Iron Chef: Garces v. Poses: I’d feign injury and defer. I’m not into it. There is a dangerous Iron Chef/Martha Stewart culture we live in these days that sets the bar too high for the home chef.
What host gift I should bring when you invite me over for dinner: A great bottle of red.
What I shouldn’t: I love flowers, but unless they’re arranged in a vase, don’t bother.
