The man who brought Philadelphia its hippest and coolest spots has decided to tackle the English pub, one of the least hip and cool concepts out there. And, of course, Stephen Starr managed to make it hip and cool. Have a cask ale (more on those on page 109) by the fireplace while you’re waiting — and waiting — for a table. Once the hostess navigates you through the warren of rooms that is the 160-person pub and dispenses you at your table, go for oysters and English staples, all of which will make you question British grub’s bad rap.
