We’re trained from a tender age to understand that if there’s a line of Philadelphians willing to wait for something, what’s at the end of that line is probably pretty good. The hot chicken at Asad’s is absolute proof of this — fried crisp, spicy enough to make your hair sweat, served with pickles, coleslaw and fries. It’s on offer in an orange hut at a gas station, it’s $10, and if it weren’t as good as we’re saying it is, why would all those people stand around waiting for it?
