The Jose Garces empire continues to boom with his fourth Philadelphia location and another take on Latin cuisine. This time Garces takes us to a little corner of Peru that was influenced Asian settlers and now boasts Peruvian/Cantonese fusion food. Diners get to experience the unique flavors through small plate options like ceviche spiked with soy and thai basil and stir fried rice with chorizo, all in a moody brown-and-orange designed-to-the-nines spot.

I loved garces food and had the oppurtunity to eat at everyone of his restaurants. After a while i decided i wanted to work for him so i recently helped in his latest opening of Chifa restaurant. It was great, well structured and had great chefs running the kitchen untill about a week ago. I finished my sunday shift on grill my station and was even asked if i was financially stable. I asked to see the schedule and was told i was working wednesday and came in wednesday and checked the schedule and my name was off. The chef told me i was laid off for making too mucch hourly at 12.50 an hour no notice no nothing.. I realized that i have become a faceless face in a growing sell out corporation.
