Marc Vetri Is Opening a Restaurant in Vegas

The Vetri Family empire has been expanding outside of the Philly area ever since Marc Vetri sold the company to Urban Outfitters back in 2015.

And based on a cryptic Instagram post, it looks like Vetri Cucina may be headed to Las Vegas.

Eater Las Vegas reports that Marc Vetri, along with Michael Symon and Bobby Flay, will open restaurants in The Palms resort as part of an ongoing renovation. The restaurants are expected to open in 2018.

Marc Vetri also posted a video on his personal Instagram account in which he writes “Vegas?” on a Vetri Cucina menu.

On Wednesday morning, Vetri himself confirmed with Philly Mag that he will indeed open a Vetri Cucina (the only restaurant in the Vetri Family not included in the sale to Urban) at The Palms, proving that the Vetri name is still an attractive investment to bigger brands, and that it’s capable of more than just good mall pizza.

“It’ll be like the old Vetri — a la carté,” says Vetri. “And it won’t be your typical, large Vegas-y restaurant. Just 65-70 seats. We’ll offer the same high level of service and, of course, all the [menu] staples: spinach gnocchi, the onion crepe, goat and polenta, the boar. It’ll look like Vetri, too.”
