Bistrot La Minette Is Celebrating Its Sous Chefs

Peter Woolsey opened Bistrot La Minette five years ago yesterday. And come September, Woolsey will be celebrating that fifth anniversary on September 11th and 12th September 18th and 19th with a special blowout five-course dinner.

But before that, Woolsey wants to celebrate his sous chefs who he calls “the best I have ever had.” This Wednesday and Thursday (August 28th and 29th), Nich Bazik and Paul Carrier will be pulling out all the stops for their special four-course, $35 tasting dinner.

White asparagus soup, cuttlefish compound butter, braised calamari, e’splette oil (Nich)
François Montand Brut Rosé Grenache Noir / Cinsault, Cotes du Jura

Fried sweetbreads, honey dew and cantelope, bacon marmalade, fines herbs, melon gastrique (Nich)
Domaine des Deuz Puits, Muscat, Roussillon

Sous vide pork loin, pork sausage, cider vinegar sauce, potatoes, lightly smoked goose berries (Paul)
Domaine Zind Humbrecht Riesling, Alsace

Goat cheese financiers, beet sorbet, fromage blanc with lemon verbena, black currant sauce (Paul)
Edmond Briottet Crème de Cassis de Dijon, Ormarine Picpoul de Pinet, Languedoc

The dinner is $35 per person with an optional $15 wine pairing.
