Don’t let Kevin Yanaga’s mild-mannered disposition lull you into thinking his omakase is modest. The owner and chef of this sushi speakeasy (located through the bookcase of his other restaurant, Yanaga Kappo Izakaya) is a maximalist — at his counter, a single piece of nigiri is actually a tower of scallop, toro, A5 Wagyu, squid, and uni teetering on a sheet of nori. The chawanmushi? Made with coffee milk dashi and topped with coffee caviar (a product of his coffee-inspired OmaCafe collaboration with the Coffee Connoisseur Club).
