From their open kitchen, brothers Alberto and Efrain Sandoval are paying tribute to the foods they grew up eating in San Mateo Ozolco, a small Pueblan town perched on the side of an active volcano. They make their own tortillas daily, using their grandmother’s overnight nixtamalization process, and the smooth, velvety texture makes them not quite like any tortillas we’ve had in Philly before. Don’t skip anything that involves their peerless mole; the raw kampachi with olive oil, lemon, and habanero; or the best carnitas in the region.
