The menu changes regularly, but typical dishes resemble these pan-seared sea scallops, above, with citrus saffron vinaigrette and roasted fingerling potatoes.

Satisfy your sweet tooth at BRÛLÉE: THE DESSERT EXPERIENCE (The Quarter at Tropicana Casino and Resort, 2801 Pacific Ave., Atlantic City 609-344-4900, bruleedesserts.com), a dessert-only restaurant with addictive qualities. Best bets: the lemon cheesecake chiffon; the Banana-nana, a milk-chocolate treat with bananas Foster; and a freshly made Blueberry Amaretto Sour or glass of vintage champagne.

THE CLAM BAR, aka SMITTY’S to shore-goers (910 Bay Ave., Somers Point 609-927-8783), is a summer must. Go for the mako shark in a soy, olive, ginger and garlic sauce, the crab cake sandwich, or topneck and littleneck clams on the half-shell, shucked open to order by this BYOB’s fulltime clammer. Expect a wait that’s well worth it.
