Summer Food: The Tastes of Summer: Barbecue

The potato salad at Fat Jack’s BBQ (1261 Blackwood-Clementon Road, Clementon; 856-309-7427) might not be equal to your momma’s, but the tender pork ribs are outstanding. Order them wet, with sweet sauce, or with a Memphis-style dry rub. Hefty sandwiches and lots of à la carte side dishes make this a great takeout spot when it’s too hot to cook. In Ambler, the ribs at Whooley’s Cooking (West Maple at East Mount Pleasant Street, Ambler; 267-446-0593) are supremely succulent, and pit boss Charles Johnson’s vinegar sauce speaks with a Carolina drawl. But this outdoor pit behind American Legion Post 769 does business only on Fridays and Saturdays. Get there around 2:30 or 3 p.m., because by dinnertime they may run out of ribs, chicken, beef ribs and turkey wings.
