That’s 31-year-old owner Rebecca Michaels in the open pastry kitchen, turning out “baking that’s not too fussy, not too French-y.” What you’ll see in Flying Monkey’s bakery cases: cakey and fudgy brownies, made with Valrhona cocoa and extra-rich Plugra butter; handmade marshmallows covered in chocolate and coated with graham cracker crumbs; pound cakes in unexpected mint, ginger-lime and green tea flavors; and classic lemon butter cake brightened with blackberry compote (pictured). Also new to the Market this spring: Hershel’s East Side Deli and an as-yet-unnamed butcher shop.
