Ordering via Instagram DM is not the most efficient ordering system for acquiring bagels, but it’s currently the only way to get your hands on the chewy-centered, crispy-edged bagels made by Philip Korshak. Luckily for us, in a round-up of the city’s new scene of newbie bagel-makers, the Inquirer shared that Korshak has signed a lease for a brick-and-mortar location at the corner of 10th and Morris Streets in South Philly, across the street from East Passyunk’s long-standing Italian pasticceria, Varallo Brothers Bakery.

Korshak told us he’ll serve bagels – duh – and schmears, as well as bagel sandwiches “because bacon egg and cheese.” He also said he’ll do some in-store fermentation, have a record player close to the oven, plus “book drives, dance parties and fighting the power.”

He’s aiming for a summer 2020 opening. Until then, he’s still one of the best Philly food experiences out there. Find him here.
