A Farmer-Driven Coffee Shop Is Coming to Callowhill

Bison Coffee will set up shop at new boutique residential property Sixteen Hundred.

The flagship location of Bison Coffee Company will open in the ground-floor retail space at Sixteen Hundred, a newly-restored boutique residential property at 1600 Callowhill Street.

A father-son duo, Donald B. Pierce III and Donald B. Pierce IV, are behind the project, and produce from their farm, Windy Hill in Deerfield Township, N.J., will drive a farm-to-table menu for the cafe. They’ll source beans from Elixr Coffee Roasters.

The Pierces drew on their love of the outdoors and family trips to national parks like Yellowstone for the 1,300 square-foot cafe’s name and rustic, Midwest-inspired design.

Bison Coffee is slated to open by late summer, and there are plans to open a second location in the area before the end of 2019.
