New Menu Items At Le Virtu
Beginning February 2, Le Virtu will offer daily-changing polentas with house-made ragus. The polentas can be served in individual portions as well as family-style for the table to share. The family-style portion must be ordered 24 hours in advance and will cost $15 per person. The ragus the polentas will be served with will change daily reflecting seasonal ingredients and the kitchen’s specialties.
Chef Joe Cicala was inspired by seasonal interpretations of the dish during his recent travels to Italy. Along with the polentas, Le Virtu is introducing a variety of new menu items including Vellutata di Pastinaca (parsnip vellutata with carmelized chestnuts and crispy pancetta), Burrara in Guazzetto (oven-baked, imported Pugliese burrata cheese with tomatoes, olives, oregano and basil), Sagne con Ragu di Coniglio (short-cut ribbon pasta with braised rabbit and black Pugliese chick pea ragu), and Trota–trout with a celery root and potato mash, and a celery and caper berry salad.
