Bufad Wood Fired Pizza in Pictures
Today serves as the grand opening of Bufad Pizza at the corner of 13th and Spring Garden. The pizzeria is owned by Mike and Jeniphur Pasquarello (the tandem behind Cafe Lift and Prohibition Taproom) and they are turning out Neapolitan-style pizzas that rival the best in the city.

Bufad Pizza Menu
Scamorza – Smoked cows milk cheese seared in a cast iron skillet with oven roasted mushrooms and topped with spicy garlic infused oil. Served with pizza bianca. $10
Crostone – Bacala and potato, chicken liver and guanciale, or a puree of cannellini beans and fresh herbs. Choose one or one of each. $10
Burrata – Creamy mozzarella served ith oven roasted Brussels sprouts, pancetta, currants and pine nuts. Topped with Clara’s pangrattato. $9
Antipasti – Seasonal local foods roasted, sauteed, preserved or however we see fit. Served room temp., family style. $7 per person.
Fennel – Shaved fennel, blood orange, and red onion tossed in a broken vinaigrette of citrus, olive oil, oregano and chili flakes. $10
Escarole – Green apples, toasted almonds and Grana Padano dressed with a warm raisin and speck vinaigrette. $10
Tritato – Chopped salad of hardy greens, red onions, pepperoncini, sopressata, roasted olives and aged provolone in a red wine vinaigrette. $10
Margherita – Uncooked San Marzano tomato sauce, fresh mozzarella, torn basil and extra virgin olive oil. $12
Marinara – Slow cooked tomato sauce, oregano, slivered garlic, basil and extra virgin olive oil. $10 Add little neck clams or anchovy for $3
Sausage – House made fennel sausage, sauteed greens, cacio e pepe and shave pecorino. $12
Escarole – Tomato sauce, spicy marinated escarole, Napolitan salumi and ricotta cheese. Topped with Clara’s pangrattato. $13
Mushroom – Wood roasted mixed mushrooms, rosemary, guanciale, smoked mozzarella, Taleggio and finished with white truffle oil. $13
Potato and Egg – Yukon potatoes, scallions, prosciutto, fontina, and mozzarella cheese finished with an egg. $14
