So You Want to be a Ninja


Besides being masters of stealth, all ninjas have masterful knife skills. Take the first step towards becoming a ninja or at least towards making some good French soups with Spinal Tapas’ Soups On! Mirepoix Madness: Basic Knife Skills class at Philly Kitchen Share. On Saturday, February 20th at 4pm join Tim McGinnis as he instructs on on the intricacies of knife skills including the proper way to handle a knife and classical French knife cuts such as julienne chiffonade and brunoise.

Tickets are all-inclusive and cost $35 per person.

PHILADELPHIA’S CULINARY COLLABORATIVE EVENT COMPANY,

SPINAL TAPAS, TO HOLD COOKING CLASSES IN COOPERATION WITH PHILLY KITCHEN SHARE

PHILADELPHIA, PA – Chefs and food writers Tim McGinnis and Brian McManus are continuing their culinary collaborative efforts with cooking classes at Philly Kitchen Share (1514 South Street, 215.558.3922).

The duo decided to combine their cooking experience after working together as writers for the Philadelphia Weekly and discovering a mutual love for and extended background in the culinary realm. McGinnis is a graduate of the culinary program at Johnson & Wales University in Providence, RI, studied hospitality in France and has worked extensively in restaurants along the Eastern seaboard. He presently applies his knowledge as a culinary instructor to at-risk-youth. McManus honed his cooking chops at a culinary program in his native Houston and cooked in various restaurants for nearly a decade, including the famed Brennan’s. He is currently a food writer and the music editor for the Philadelphia Weekly.

Tapping McGinnis’ eight years as a culinary instructor, the culinary crew will begin their cooking classes on Saturday, February 20th with Soups On! Mirepoix Madness: Basic Knife Skills. Three little ingredients, carrots, onion and celery, make up what the French refer to as mirepoix and serve as the foundation of these two great soups: Portuguese Caldo Verde and Beef Minestrone. McGinnis will be instructing his students on the intricacies of knife skills including the proper way to handle a knife and classical French knife cuts such as julienne chiffonade and brunoise.

The class is the perfect opportunity to hone your cooking skills, advance your palate, cook without a net and have some fun. As always, the classes will take place in Philly Kitchen Share’s commercial kitchen, giving the student an insider’s viewpoint into the sights, sounds, and smells of a professional kitchen. Soups On!
