If you’re more than an occasional Philadelphia restaurant-goer, you’ve probably seen David Fields around town — after all, he’s been photographing food and restaurants locally since 1991, when he spent a week chasing George Perrier around Le Bec-Fin with a camera. Now he’s bringing the behind-the-scenes world of Philly’s coolest kitchens to the Restaurant Club in sparkling HD video. This week, he heads to Reading Terminal Market for a bone-a-fied lesson in prepping spring lamb.
