My grandmother would describe today as raw: cold, wet, windy. I would describe it as the perfect occasion to make a huge batch of soup.
Last night, I kicked off my soup-making extravaganza with a quick and healthy chicken noodle soup recipe courtesy of Cooking Light. It was pretty darn tasty, and easy, too. I had to add a few more shakes of salt to get the seasoning right, but I’m not complaining—especially since this sucker clocks in at a measly 237 calories per serving. That meant I had enough calories left over for a slice of cornbread and a pumpkin ale to wash it down. Win-win.
