What To Eat This Week: Slimmed-Down Summer Favorites


It’s a bummer that a lot of summer barbecue favorites happen to be terrible for you. Whatever it is — funnel cake, pasta salad, corn dogs — it seems like it’s either deep-fried or drowning in mayo. There has to be a way that we can enjoy these warm-weather comfort foods without expanding our waists, right?

So in honor of the holiday, we dug up healthier versions of some classic American summer dishes to inspire your cooking this week. Some are more patriotic than others (check out the gorgeous Red, White, and Blue Potato Salad), but they’re all definitely lighter and more nutritious than their traditional counterparts.
