Carrot and Apple Salad With Pine Nuts

Ingredients

2 Tbsp. golden raisins
1/2 c. apple juice
1 c. peeled and shredded carrot
1/2 c. peeled and shredded apple
1 Tbsp. orange juice
2 Tbsp. toasted pine nuts
1 tsp. kosher salt

Directions: Soak raisins in apple juice until liquid is completely absorbed. Combine raisins with remaining ingredients. Enjoy chilled or at room temperature.
