Be Well Recipe: Strawberry, Walnut and Goat Cheese Salad

Whip up this simple spring salad for a tangy dose of detoxifying greens and heart-healthy omega-3s!

Strawberry, Walnut and Goat Cheese Salad
Serves 2

Ingredients

For Salad
4 cups spring greens or mesclun mix, lightly packed
1 cup fresh strawberries, sliced
½ lb fresh asparagus, sliced
¼ cup walnuts, chopped
1 oz goat cheese, crumbled

For Dressing
(Note: This recipe makes four servings. Save half of the dressing for later in the week!)

¼ cup olive oil
2 tbsp fresh lemon juice
1 tbsp apple cider vinegar
1 tsp honey
½ tsp Dijon mustard
Sea salt and ground black pepper to taste

Instructions:
This recipe takes no time at all! Clean and slice asparagus and strawberries. Mix with lettuce. To make salad dressing, whisk ingredients together. Drizzle half of dressing over salad and mix well. Divide salad into two servings and top with goat cheese and walnuts. Serve immediately. Remaining dressing can be refrigerated and served within two days. Enjoy!

Shopping Tip:
Always purchase organic strawberries when possible. Conventional strawberries are one of the most pesticide-laden foods on the shelf.
