Recipe: Sauteed Shredded Zucchini


Last night I was craving something green, but it was too cold for a salad. Instead, I made sauteed shredded zucchini—a side dish I love,  but haven’t made in a very long time.

Grated zucchini and chopped red onion. (My iPhone hardly did the vibrant colors justice.)

My pseudo recipe: Grate the zucchini (I used two, the exact number left in my refrigerator) and chop some onion (I used about a quarter of a red onion, as it was what I had on hand). Drizzle a little olive oil in a pan, and saute onions over medium heat until translucent, about three minutes. Then, add shredded zucchini and season with garlic powder, salt and pepper to taste. Cook until soft, about six to seven minutes.
