Healthy Thanksgiving Recipes: Roasted Cauliflower

Fresh herbs + parmesan = very, very good

Roasted Cauliflower
Serves 10

• 1 head of cauliflower, broken down into florets
• 1 head of Romanesco cauliflower, broken down into florets
• 2 Tbsp. olive oil
• 1 Tbsp. chopped fresh rosemary
• 2 tsp. chopped fresh thyme
• 2 tsp. chopped fresh oregano
• 3 garlic cloves, minced
• Salt and pepper to taste
• 1 ounce parmesan cheese, shaved
• 1 Tbsp. lemon zest

Preheat oven to 450°. Place cauliflower in a large roasting pan or jelly-roll pan. Drizzle with oil then add herbs, salt and pepper. Toss well to coat. Bake at 450° for 20 minutes or until tender. Place cauliflower in a serving dish and top with shaved parmesan and lemon zest.
