Healthy Thanksgiving Recipes: Light and Creamy Mashed Potatoes

Light and Creamy Mashed Potatoes
Serves 8
• 2 pounds Yukon Gold or red potatoes, quartered, skin on
• 1 1/2 c. 1% low-fat milk
• 3 cloves garlic
• 3 Tbsp. light sour cream
• 2 Tbsp. fresh chives, chopped
• Salt and pepper to taste

Place potatoes in a saucepan, and cover with water. Bring to a boil; cook 15 minutes or until very tender. Drain. Heat milk and garlic in pan over medium heat until hot (do not boil). Remove garlic cloves then add potatoes, sour cream, salt, and pepper, and mash until potato mixture is smooth. Add chives, mix to combine and serve.
