Tonight: Fishtown Taco Exchange At Sancho Pistola’s

Starting at 10pm, chef Tim Spinner from all the various Felizes around town (La Calaca, Taqueria, et cetera) will be in the kitchen at Sancho Pistola’s alongside chef Adan Trinidad, knocking out collaborative duck tacos three ways.

So if tacos, cold beers and shots of mezcal sound like a perfect way to keep warm on a cold night in Fishtown, now you know where to go.

For Amis’ monthly industry night, Sancho and Jose Pistola’s will be the special guest restaurant. Chef Adan Trinidad will be bringing Cochinita Pibil Tacos and Mahi Mahi Ceviche to munch on. There will also be traditional and pomegranate margaritas as well as sangria pouring at reduced prices.

Shawnee Craft brewing company will also be on hand and pouring their Apiarius and Farmhouse Saison Cuvee. Free bottle pours of all three of Shawnee sours, Frambozenbier (barrel aged sour raspberry), Biere de Garde (barrel aged sour pumpkin saison) and Kriek (barrel aged sour cherry beer) will also be available.

As always, Amis industry night includes proof of hospitality employment, free food, cheap drinks and lots of fun.

TONIGHT: Two Puffy Ducks at Sancho Pistola’s

PUFFY-duck-940Kris Serviss, who is justabouttoopen Blue Duck Sandwich Company at 2859 Holme Avenue in Northeast Philadelphia is showing off his taco making ability at tonight’s Fishtown Taco Exchange at Sancho Pistola’s.

The COOK Masters program alum is preparing “The Puffy Duck,” duck confit, traditional mole, plum, pear and daikon kimchi, red cabbage and charred scallion crema, served on a deep fried tortilla.

The tacos are available after 9 p.m. and come two to an order for $13.

Collaborating with Chris Kearse

clambakeChris Kearse is a chef’s chef. His technique and food make chefs like Eli Kulp a fan. So it isn’t surprising to see a couple of collaborations coming up with the chef/owner of Will BYOB.

This Wednesday, July 16th, Will is hosting chef Adan Trinidad of Sancho Pistola’s and Jose Pistola’s for a special five-course dinner and clambake. The dinner is $50 per person and includes a complimentary drink.

And then next Tuesday, July 22nd, Chris Kearse is heading to Rosemont, New Jersey to collaborate with Matthew Ridgway, chef and owner of The PASS restaurant.

Where We’re Eating: Sancho Pistola’s

sancho pistolasIt would be worth visiting Joe Gunn, Casey Parker and Adan Trinidad’s sequel to Jose Pistola’s purely to read the beer menu. The Pabst Blue Ribbon is described as “Frank Booth’s favorite. F’ Heineken.” The Allagash White is a “way worse dancer than Allagash Black.” It’s a fun list to read, and indicative of the time you can have at Sancho Pistola’s even if you skip the beer list entirely and settle in with a margarita or smoked piña colada. But Sancho’s isn’t just a place to drink; Trinidad is putting out serious food. The tacos that make up half the menu are a good place to start; they’re broken up by land and sea. On land, the spicy pork tacos are on point; on the sea side, you can’t go wrong with tuna — or, expand your taco horizons with the scallop version. Trinidad is at his best with sea creatures, and nowhere more so than the whole fish. Wash it down with a Berber stout, which, according to the beer menu, is a “dark gift from Mexico, like Adan.”

Morimoto Is Next Up at Sancho Pistola’s Taco Exchange

morimoto-sancho-pistolas-400Sancho Pistola’s Taco Exchange brings visiting chefs to the Fishtown bar for some very interesting collaborations. Tomorrow, Wednesday, May 21st, two of Morimoto’s chefs are coming to Fishtown to make hamachi tacos.

Morimoto chef de cuisine Benjamin Dayag and sous chef William Lindsay will be teaming up with Sancho Pistola’s Adan Trinidad to offer a chilled taco dish they created especially for the evening.

 

The dish:

Hamachi, Akamiso-Konbu Vinaigrette, Pickled Tomatillo, Wasabi Crème Fraiche and Puffed Rice on a Daikon Taco

The tacos will be sold by the pair for $13. The tacos will be available after 9 p.m.

Adam Erace visits Sancho Pistola’s in Fishtown and has praise for chef and partner Adan Trinidad’s food.

The tomato-based Veracruzana sauce forming a crimson moat around the whole snapper is like a Mexican puttanesca — punchy with crushed olives, salty capers and fresh cilantro. The fish’s salamander-broiled skin shone and crinkled like tinfoil, its flesh beneath moist and glistening as it flaked into the chunky sauce dammed by tender peanut potatoes and sweet fried plantains. I’d put it up against any whole fish in the city.

Sancho Pistola’s Kicks Off Fishtown Taco Exchange Program

fishtown-taco-exchange-sancho-pistolas-4009Sancho Pistola’s is kicking off its new guest series, The Fishtown Taco Exchange Program with Will chef/owner, Chris Kearse on Monday, March 24th.

Sancho chef/co-owner Adan Trinidad is collaborating on Kearse on the taco that will be served only between 9 p.m. and midnight on Monday, March 24th.

The Will Sancho? taco is grilled lamb’s tongue, cole slaw and carrot barbecue sauce. Two tacos will be $13.

And since it is Chris’ Kearse’s taco, we imagine it might be the prettiest taco plate you’ve ever seen.

About Last Night: Opening Night at Sancho Pistola’s

Last night marked the opening of Sancho Pistola’s, the second bar from Adan Trinidad, Joe Gunn and Casey Parker, the team behind Center City’s Jose Pistola’s. The bar at 19 W Girard Avenue is turning out serious Mexican dishes and serving up Pistola’s signature great beer.

The food here struck us as a bit more authentically Mexican than what we’ve enjoyed at Jose Pistola’s. Those most authentic dishes were also the most successful as I would rank the spicy pork tacos ahead of the Korean rib tacos and I’d also highly recommend the black bean soup, which was just what the doctor ordered on a very cold night. Well that and some mezcal.
