The trio behind Philly’s two Pistola’s restaurants, Jose Pistola’s and Sancho Pistola’s — Joe Gunn, Casey Parker, and Adán Trinidad — are heading south for their third concept. The old Palladino’s space, situated at the Passyunk Avenue gateway, will be home to their new restaurant and bar, Pistola’s Del Sur.
There are only two reasons why we get so giddy when soft-shell season comes around, two reasons why we like eating them at all:
- Eating soft-shell crabs is a no-fuss way of eating crabs (which is an otherwise very fussy experience with the shell on).
- It makes us feel alive.
Digging into them with a fork and knife — really, eating any animal whole like that — is a pretty primal experience in itself.
But let’s take it a step further, shall we? Let’s chomp into them without using any utensils at all. Let’s just stuff them between bread and rip into them like the beasts that we are. We’re at the top of this food chain, so we might as well act like it.
Fishtown’s Sancho Pistola’s kicks off weekday lunch on Halloween day. Chef Adan Trinidad will be serving burritos for perhaps the first time at Sancho’s and he also has a full menu of tortas. Among those tortas:
- La Cubana
Ham, Swiss cheese, pickles, mustard, chipotle aioli
- Grilled Chicken
spinach, thyme, aioli, black bean chihuahua cheese
- Braised Short Rib
black beans, lettuce, chihuahua cheese, horseradish crema
- Egg and Chorizo
black beans, lettuce, Oaxaca cheese, guacamole
provolone cheese, broccoli rabe, long hots, thyme aioli
And in order to properly kick off lunch, on Friday, November 4th, owners Joe Gunn and Casey Parker are hosting a “European Spoils” lunch with epic beers from Cantillon.
Sancho Pistola’s Fishtown Taco Exchange series continues this evening with the Grubhouse crew coming in for “Yada Yada” Tacos. We could tell you what the tacos are but then you might not watch this amazing video.
We will tell you that the Taco Exchange kicks off at 7 p.m. at Sancho’s and $12 will get you two tacos and a sweet treat.
Tacos and beer together—it’s a beautiful thing. Which is why on Tuesday, March 29th, Sancho Pistola’s is holding their 2nd annual Tacos and Beer dinner.
The dinner will include five courses and five beers for $65. Here are the beers they’ll be pouring:
- Dogfish Head- Romantic Chemistry
- Jack’s Abby- Saxonator
- Ommegang- Rosetta
- Firestone Walker- Luponic Distortion
- Allagash- TBA
Tonight, Sancho Pistola’s is hosting another of its taco exchanges. Chef Adan Trinidad has invited chef Bill Braun of Tired Hands Fermentaria to Fishtown to make carnitas fried rice tacos. There will also be four Tired Hands beers on tap.

Tonight, “Wing Thing” is back at Sidecar. The Chef: Adan Trinidad of Jose and Sancho Pistolas. His wings: Black Garlic Mole Negro BBQ Wings with a Jasper Hill Blue Cheese Crema.
Sure that sounds pretty good, but did you hear about our wing collaboration with Sidecar a couple months back? Chef Trinidad’s got some big shoes to fill if we do say so ourselves.
The wings will be offered until they sell out, usually in four or five days.
Also on tap at Sidecar: really strong beers. Join them tomorrow, Wednesday, July 15th for High Gravity Night. The lineup looks like it could do some serious damage.

Odds are good you already missed the weirdest Beer Week event of the day–the Oxbow and Mike Fava lunch at Jose Pistola’s which was attended by two live owls–but have no fear. We combed through the entire schedule and picked three events happening tonight that are totally worth your attention.
There’s one for the beer lovers, one for the chef-stalkers and one for those of you who just love drag queens and glitter. And beer. But also glitter.

It’s volume fourteen of Sancho Pistola’s Fishtown Taco Exchange and tonight’s taco co-conspirator is South Philly Barbacoa. South Philly Barbacoa normally serves out of a food cart at 8th and Watkins on Saturday and Sunday mornings and receive nothing but glowing accolades.
Today, Monday, April 20th, Ben Miller and Christina Martinez will be showing off their pancita tacos, barbacoa tacos and consommé. The event kicks off at 7 p.m. and three tacos are $9.
