It’s National Grilled Cheese Day because some people need a made up holiday to celebrate the grilled cheese. But not us at Foobooz World Headquarters. After all, I’ve called a grilled cheese by Bobby Flay “an explosion of taste in my mouth” and Jason Sheehan recently admitted that a grilled cheese matters to him more than a thick steak or even a lobster tail. As if today’s weather wasn’t enough of a reason to go for a grilled cheese at lunchtime, maybe this list will inspire you.

Grilled cheese is the queen of sandwiches. Say what you will about its simplicity, its lack of intrinsic finesse (only rule: don’t burn), but it is precisely this lack of complexity that makes it perfect. Grilled cheese is tabula rasa—a blank slate onto which can be written anything (a love song for a hundred cheeses, a lust for tomatoes or bacon, a treatise on the comforts of childhood, of moms and dads, of easier times or poverty or innovation)—and that is what makes it so beloved. The grilled cheese sandwich demands nothing, but there isn’t much you can add to a grilled cheese sandwich that will ruin it (broken glass, gum, broccoli). It is, as it is, ideal. But infinitely customizable.

Meltkraft Is Open in Center City

Grilled cheese specialist, Meltkraft has opened its second Center City location and first standalone storefront in Philadelphia. Meltkraft, which shares space with Valley Shepherd Creamery in the Reading Terminal Market has opened a bi-level location at 46 South 17th Street.

The grilled cheese shop offers a similar menu to the Terminal location,  with favorites like the Valley Thunder sandwich of brisket and baked macaroni and cheese, as well as the Somerset, Gruyere, cured ham, cornichon pickles and wholegrain mustard. Of course if you are a grilled cheese purist, the classic is three Valley Shepherd cheeses and nothing else.

Yesterday, it was an up-close-and-personal look at the Gizmo from Paesano’s. Today, it’s the new Local Deals promotion from Caviar that’s going on right now. In keeping with our theme, we thought we’d do a round-up of all the best sandwiches you could have delivered to you until Friday with no delivery charge.

News From The New Center City Meltkraft

What was that joke? The one about being able to cook an egg on the sidewalk? Or make a grilled cheese on the hood of the car? Though it’s crazy hot out there this week, before you know it the heat will fade into cooler weather and you’ll be ready to eat something besides watermelon juice and cold sesame noodles.

The good news is that that time is going to coincide with the opening of the newest Meltkraft. When the original location of the single-farm grilled cheese shop opened in Reading Terminal back in 2013 people fell hard for grilled cheese sammies stuffed with brisket, caramelized onions, and potato chips. The next two locations of the shop have been in New York, but for location four they’re coming home to roost.

We made it through a long winter. We gloried in a warm spring. We saw new restaurants open and old restaurants close and it sometimes felt like we were gaining more than we were losing, but not always.

Still, there was always the summer to look forward to. There was the list of upcoming openings which seemed to be growing longer with each passing week — loaded down with well-known names and interesting concepts. The only thing was, so many of those places seemed like they should be open already. Like we’d been waiting so long for them that it was hard to believe they weren’t serving dinner tonight.

So with that in mind, we took a long look at our list of upcoming openings for the summer. We made a lot of calls, sent a lot of emails, pestered a lot of really busy chefs. And now, we have some updates for you — on everything from Bud & Marilyn’s to Johnny Manana’s. So for all of you out there who’ve been wondering if that Center City Meltkraft is ever going to open, or whatever happened to Jeremy Nolen’s Whetstone, you’ve come to the right place. The grilled cheeses are of course glorious, after all you can choose bacon fat or duck fat for the sandwich to be grilled in. Put down the white bread and step away from the Kraft singles—we’ve found a list of stuffed grilled cheese sandwiches so loaded and gluttonous that they definitely aren’t your average comfort food must-haves.

Valley Shepherd Creamery Finally Ready to Open

Valley Shepherd Creamery will finally open in the Reading Terminal Market tomorrow. The outpost of the North Jersey cheese farm will feature a glassed-in cheese room, where visitors can watch mozzarella being stretched and a grilled cheese counter named MeltKraft.

MeltKraft will offer eight sandwiches and sides that include duck fat, bacon fat, chicken, bacon and truffle oil.
