Serves four
2 lb. chicken wings
1 tbsp. ground cumin
1 tbsp. ground coriander
1 tbsp. paprika
1 tbsp. kosher salt
1 tbsp. fresh ground pepper
1/4 c. virgin olive oil
1/3 c. fresh lime juice
2 tbsp. yellow mustard
1/4 c. puréed Scotch bonnet peppers
1 tbsp. brown sugar
1/4 c. fresh chopped cilantro
Mix spices and rub onto wings. Grill over a medium fire for five to seven minutes per side, or roast in a 450-degree oven for 15 minutes. Blend remaining ingredients and pour over wings.
