Serves six
1 medium cucumber
1 tbsp. sea salt
4 mint leaves, chopped
2 tsp. chives, chopped
1 c. plain whole yogurt
Juice of 1 lime
Hot red pepper flakes to taste
1. Coarsely grate cucumber into a medium mixing bowl. Season with salt and let stand for ten minutes.
2. Squeeze excess liquid from cucumber, then mix in remaining ingredients.
