The scene at Michael Mina’s east coast jewel of a seafoodery is surprisingly low-key. Sure, there are exceedingly well-heeled grown-ups sipping shiso-leafed cocktails at the Italian marble bar. Yes, those likely are oil magnates doubling down on extravagant lobster potpies. Still, like the chef himself, the staff is gracious and unobtrusive, gently indulging your simultaneous cravings for lobster corn-dogs, beginner-friendly Hama Hama oysters, extra-buttery Manila clams, and unpretentious combinations from the DIY salad menu, invisibly replenishing silver and sauvignon blanc, and subtly pointing out Seablue’s gastronomic stars: tableside-mixed tuna tartare; tagine of striped bass, pearl pasta and Japanese eggplant; foie gras-topped ahi—and anything dessert with “molten” in its name.
