Zealots familiar with the Northeast-based mini-chain were counting down the days till the opening of this newest Santucci’s just a block from the Italian Market, but wondering how the pizzeria would fare away from its roots and in the depths of South Philly, where everyone already has a favorite pizzeria. As it turns out, Santucci’s carves its niche with a killer red-top pie. The reason the sauce is on top of the cheese at Santucci’s is because it demands top billing. The pizzas arrive with a thickly applied and still-steaming sauce, rich in color and bespeckled with herbs.
