There’s plenty of authenticity in daring options like jellyfish and snow frog, but also standard rice and noodle dishes and the Americanized basics—sticky-sweet sesame chicken—not to mention old Mr. Ming’s favorites like the Hong Kong-style beef. With quiet, meticulous service, hot towels after your entrée, and cute details (bright red chopsticks rest on oyster shells), you’ll just never mind that there’s actually no such thing as a red pearl.
