The sheer number of choices beckons me back to Penang. Many dishes are unusually flavorful; some, like the Penang rojak (fruit salad with funky-smelling shrimp paste), taste very strange to non-Asians. It’s fun to watch the stretchy giant Indian pancakes called roti canai take shape in the open kitchen, or to share a heaping plateful of spicy fried squid with a sweet lacquer. The industrial-design dining room attracts groups of young Asians, who have adopted this restaurant as their own.
