The pies at Nomad arrive at the table uncut. It’s up to you, the customer, to slice them. It isn’t that big a deal, really—certainly- not as daunting as de-boning a whole fish or even turning a porterhouse into bite-size chunks. And yet at Nomad, it somehow seemed just … wrong. What’s more, the servers seemed inordinately proud of the fact that the pies were served uncut—in the Italian style, they insisted. And while the spicy organic sausage provided just the right topping to the more-chewy-than-crispy crust, and the Victory root beer on draft stands as the perfect pizza accompaniment, I would have enjoyed everything more if the kitchen had just sliced the damn pies.
