M Restaurant’s garden seating is a draw all on its own, but chef Michael Caspi (who comes to Philly having been trained by the likes of Thomas Keller, Alaine Ducasse and Daniel Boulud) is offering a menu at this hotel restaurant that doesn’t get half the buzzing fuss it deserves among the city’s best-heeled eaters. What Caspi is doing here is a modernist’s take on the bright, clean and worldly menus of the best hotels—offering roasted barramundi with sweet-sour hibiscus sauce one night, a champagne flute full of morel foam and blueberry puree on another, and amazing beef ravioli punctuated by a 3-day confit of shallots.
