Dining at Kisso is a little like having your kid’s portrait drawn at a street fair. Nothing can change the fact that the work is being done individually, piece by piece; if you don’t have patience in you, don’t get in that line. But if you have a Zen center and can wait with the rest of the young, hip and black-clad for beauty to slowly evolve, you will find no better sushi in town than the killer maki—broiled eel, cucumber, scallion and salmon skin—at Kisso.
